Salmon with Spinach Orzo

This is one of my family’s favorite meals. I got the idea from Macaroni Grill and have adapted it for a great at-home recipe.

Salmon:

1/2 pound salmon per person
Sesame Ginger Marinade (I use Lawry’s)

I always get the Salmon with the skin on.  I put it in a non-stick pan or top of stove gridle skin side down and cook it on medium heat for about 5 minutes or until it looks like it is getting cooked half-way through. Then I turn the salmon over and with a knife, pull off the skin. It comes off very easily and the salmon is not burned on that side. I brush liberally with sesame ginger marinade on the top side, cook for about 5 minutes, flip it over and brush the other side with marinade. I flip one more time so both sides have browned marinade on them. The thing that restaurants do to Salmon is overcook it. When it starts flaking easily, it’s time to take it off. You won’t believe how good it is.

Spinach Orzo:

1 box Orzo
1 or 2 packages of Spinach
2 cloves of garlic
Olive oil
1 red or green pepper (if desired)
1/2 diced onion (if desired)

Boil the orzo and drain. I take a big pan and wilt the spinach. I remove the wilted spinach to another dish. Then I cook the onion, pepper and garlic in a little olive oil. I add the orzo and spinach to the pan. I add salt and pepper to taste and a little more olive oil if needed.

It is a great dinner and easy to make!
